the rest of europe in pictures! (part1)

ive bean so slack on getting the rest of my shots of europe up here... what is it about taking 1000's of photos while you're away but as soon as you get back you forget about them? thought id put them up before the end of the year is out... ive put them in order of our flying pattern... we have copenhagen, prague, istanbul, rome, i skipped spain (maybe because its like the 100th time ive bean there) & beautiful, gorgeous, breathtaking paris :) by no means am i a particularly great photographer but ive always liked snapping away so here are some of my favourites! just looking @ them is making me wish i was back there :)

happy new years everyone! x

good ol' london town...

i dont know what it is about london but every time i go back there i feel like im home. ive spent a few years living there so i know my way about but its more than that... maybe its the vibe? maybe its the fast pace? maybe its the coolest kids ever sporting the newest fashion threads running around areas like fitzgrovia, shoreditch & chelsea on their way 2grab the most expensive organic coffee in europe in some warehousey cafe? who knows? whatever the case... every time im in london im usually smiling (whilst shivering in the cold! ;)

here are some of my shots of our time in london...
the rest are coming soon.... (i hope!)

raspberry & pistachio friands

gday everyone :) i was going through some of my shots the other day & notice that nicky & i shot this a few weeks ago but for some reason i forgot to post it up on here? silly woman... this is one of my favourite recipes for friands as they always turn out so light and delish! the secret is to use fresh raspberries! ;p below is the recipe for you...

raspberry & pistachio friands

method:

3/4 cup almond meal
1/4 cup finely ground pistachios
1 2/3 cups icing sugar, sifted
3/4 cup plain flour, sifted
1/2 teaspoon baking powder, sifted
5 eggwhites
125g butter, melted
200g fresh raspberries (but you can also use frozen ones!)
2 tablespoons finely chopped pistachios, extra

Preheat oven to 180C. Place the almond meal, ground pistachios, icing sugar, flour, baking powder, eggwhites and butter in a bowl and whisk until combined. Fold through the raspberries and spoon the mixture into 12 x 1/2-cup capacity lightly greased rectangular tins or muffin tins. Sprinkle with the chopped pistachios and bake for 20–25 minutes or until the friands are golden and cooked through. Using a palette knife, loosen the edges and remove the friands from the tins immediately. Allow to cool on a wire rack before serving. Makes 12

enjoy! :)
